Default dedicated hosting?

What is dedicated hosting? What is the difference between this and 'regular' hosting?

Dedicated hosting means that the server your website is on is for that website only, and you usually have complete control over what software you want to install on it.

"Regular" hosting is usually hosting that you share with a number of other people on the same server or "box".

When do you need dedicated hosting? Is there some sort of bandwith cutoff or website size or something? I know it can speed things up, but how do you know when you need it?
